It’s not hard to tell that breakfast food is my number one genre of tasty things to make. These pancakes are the epitome of what I’d want all my food to be like – warm, subtly sweet and slightly indulgent (helloooo vanilla mascarpone whipped cream! Yes I will dollop this on everything).

These little beauties are from Steph’s new cookbook, Easy Gourmet*, the most stylish cookbook I think I’ve ever seen! It’s full of brilliantly simple recipes which all sound and look delicious. She even put cool little graphics (just like the ones on her blog) on every recipe photo.

Carrot Cake Pancakes with Vanilla Mascarpone

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp sugar
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • tsp grated nutmeg
  • tsp ground ginger
  • 1 cup finely grated carrots
  • 1 large egg
  • 1 cup buttermilk
  • ½ cup mascarpone , , room temp
  • 2 tbsp sugar
  • ½ cup heavy whipping cream , (double cream)
  • 1 tsp vanilla , (I used vanilla paste)
  • 3 tbsp desiccated or shredded coconut

Instructions

  • In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt,
  • cinnamon, nutmeg, ginger and carrots. In a separate bowl, whisk together the
  • egg and buttermilk. Add the wet ingredients to the dry and mix until just
  • combined. Let batter sit for 10 minutes while making the vanilla mascarpone.
  • In a bowl, cream together the mascarpone and sugar until the sugar is dissolved.
  • In a separate bowl, whip up the whipping cream until it thickens and holds
  • medium peaks (when you lift the whisk from the cream, the tip of the peak will
  • curl over on itself). Gently fold together the mascarpone- sugar mixture with the
  • whipping cream and mix in the vanilla. Set aside in the fridge.
  • Heat a non-stick frying pan over medium-low heat. Brush a thin layer of butter or oil on your pan. Drop the batter a tablespoon at a time into the pan.Cook until tiny bubbles appear on the surface, about 2-3 minutes. Flip and continue cooking for 1-2 minutes. Keep the pancakes in the warm oven until you’re done with the batter.
  • In the still-hot frying pan, toast the coconut over a low heat, stirring often until golden brown (1-2 minutes). Remove from the pan and set aside.
  • Top the pancakes with vanilla mascarpone and toasted coconut.

For breakfast, oatmeal is a very humble food on its own, but baked with lots of fruit & spices (and topped with a scoop of vegan vanilla ice cream when I’m feeling indulgent), it’s like eating a healthy dessert for breakfast. As for brunch, French toast with fresh berries is definitely a favourite 🙂

    My favorite breakfast is a stack of large pancakes, made from scratch and covered with 100% real Maine or Vermont maple syrup. At times, this can be my favorite lunch as well

  7. For a leisurely brunch, waffles are the winner for me. But it just occurred to me, why am I limiting this to weekends? (the only days I get time to cook breakfast) I’m totally having these for dinner tomorrow!

  8. Cacao oatmeal, or granola and yogurt or a simple toast aside of some latte. Basicly anything with caffeine and a banana. Otherwise I will NOT wake up lol

  9. Breakfast food is my absolute favourite food but I am also very slow in the morning and don’t have time to be fancy so lately it’s been toast with homemade almond or cashew butter and honey. These pancakes though are begging me to get busy next Saturday morning!

  10. I will be passing this recipe along to my daughter, whose daughter, my beautiful granddaughter, loves eating pancakes for breakfast, lunch and dinner, sometimes all in the same day. If I will try to figure a way to make them work using rice flour and a non-dairy substitute.

  13. I have to say that my favourite breakfast food is organic peanut butter, banana, chia seeds and yogurt all mixed up. I may have some kind of a problem since I’m eating it literally every morning.

  18. I always have to have brekky on the go ): so my favourite breakfast ideas are to make almond milk overnight oats or chia pudding! I just stock em’ in the fridge and grab them when I leave for uni! c: love love love love your new book Izy! X

  19. My favourite breakfast is Vietnamese banh mi or sticky rice, as I ate them growing up. A more Western favourite would be anything savoury and hot such as pancake and french toast 🙂

  21. Oh wow I really must try this! I have a lot of favourite breakfast yummies but right now it’s cinnamon wholemeal pancakes with with peanut or hazelnut butter and banana (with a bit of cinnamon on top for good measure). My mum made me some last month and I liked them so much she’s given me a stockpile of the pancakes!

  29. I have to pick a favourite? I love pretty much every breakfast food going, at any time of day. I’m currently on an oatmeal kick, mainly because it’s an easy weekday option, but it’s pretty hard to go past good french toast with bacon and maple syrup when I’ve got time – a perfect mix of sweet and savoury, soft and crunchy.

  30. I love breakfast foods, definitely one of the main reasons I get up in the morning! I love granola with loads of fresh fruit and yoghurt, or it has to be pancakes for me. One of my favourite cakes is carrot cake so these pancakes sound amazing!

  31. favourite breakfast/brunch food has to be mashed avocado on sourdough with cottage cheese and a smidgeon of vegemite, or cinnamon french toast with caramelised banana… I can only dream, I don’t have these options at my uni halls 🙁

    For brunch I looooove croissants with salmon, ricotta, goats cream cheese, .. and I like veggie scrambled eggs 🙂
    For simple breakfasts, banana peanut butter toast is divine, or some yoghurt with honey/maple syrup <3 I especially love goats or sheeps milk yoghurt!

  37. I’m with ya–I could do breakfast at any hour of the day. Hands down favorite is a sweet and savory combo like waffles and bacon, or waffles and chicken. The sugar/salt duos always win out in my book. P.s. Congrats on your book–I pre-ordered my copy and can’t wait till it comes!

  38. I love a simple boiled egg and soldiers – obviously with the salt and pepper to hand! ALTHOUGH I was recently introduced to Kedgeree and can see that being a fantastic brunch/lunch feast! Porridge is my standard best breakfast. … best time of the day!

  39. My favorite breakfast is a creamy warm oatmeal with apricot jam, definitely a must during the cold winter months! I also really like switching the jam for sliced banana and peanut butter, yum..

  44. Those pancakes look awesome! My ideal breakfast/brunch would probably be brioche french toast with maple syrup and lots of fruit, with the person next to me having a full Scottish breakfast so I can steal some haggis/black pudding/mushrooms/bacon from them.

  45. love this. breakfast for me is usually some of my homemade sourdough bread topped with avocado and a fried egg, or your gluten free pumpkin pancakes with plain greek yogurt. but my favorite breakfast has to be scones 🙂 or croissants.
    anything with sugar. i’m not choosy!

  54. I eat oatmeal for breakfast every morning and my favorite combination is banana, dried cranberries, walnuts, chia seeds, ground flaxseeds, cooked quinoa and a heavy drizzle of honey!
    We make breakfast for dinner quite often, happens to be my kids’ favorite meal. Our usual is homemade pancakes, waffles or French toast (made with Challah bread…its the best).
    I love carrot cake, definitely have to give these cakes a try!

I’m on a dairy-free month but I’ll had a go at these after it! or, maybe I’ll try them, impatiently sooner, with coconut cream in place of sour cream……Yum, they look like a perfect brunch, there’s something rather indulgent about pancakes in the middle of the day.
    Favourite breakfast? Hmm, big fat blueberry pancakes drizzled generously with honey and dolloped with creme fraiche would have to be mine.

  61. My favourite brunch or breakfast food is half a toasted bagel, topped with some finely sliced avocado, sprinkled with fleur de sel, topped with a poached egg, sprinkled with chilli flakes. And cherry tomato halved, and confites in the oven with salt, pepper and olive oil. YUM!

  67. Viva la pancake! We love pancakes in our nest and make them about four times a week. Carrot is usually one of the main ingredients as my kiddos don’t eat them so I blend them all. I don’t bother with grating too much precious time in the morning…just throw whatever vegie I have available and blend away with the rest of the yummy ingredients. Happy Nesting!
