Coconut flour pancake with egg, avocado + dukkah

These little coconut flour pancakes are becoming a quick favourite of mine. They’re really simple to stir up in the morning (or sometimes I make the batter at night and leave it in the fridge until breakfast time) and are incredibly filling! The texture is somewhat in-between a crepe and an American pancake – only a few mm thick with a slightly fluffy texture. Akin to socca but not so savoury, imo.

Here I went for a substantial topping of avocado, fried egg and rocket. I adorned it all with dukkah as my mum is now obsessed with putting dukkah on everything so I’m jumping on board! You can easily take this a sweeter route though with a topping of yogurt and berries or some sauteed apples!

Coconut Flour Pancake with Avocado, Eggs & Dukkah

Ingredients

For the pancake:

  • 2 tsp butter or olive oil
  • 1 tbsp coconut flour
  • 1 tbsp buckwheat flour
  • 1 egg
  • pinch of baking powder
  • pinch of salt
  • 60 ml (1/4 cup) milk, any kind

Toppings:

  • 1/2 avocado , sliced
  • 1 tsp dukkah (see notes)
  • a fried egg
  • handful of rocket (arugula)
  • lemon juice + flaky salt

Instructions

  1. Place the butter/olive oil into a small (6") skillet or cake pan and place that into the oven at 200 C (400 F) while you make the batter.
  2. In a small bowl stir together the coconut flour, buckwheat flour, baking powder and salt into a smooth paste. Stir in the milk. Pour the batter into the hot skillet and place back into the oven for 10 minutes.
  3. Once baked, slide the pancake onto a plate and top with sliced avodaco, dukkah, the egg and rocket. Finish it off with a squeeze of lemon juice and a sprinkle of salt.

Recipe Notes

- you can make the pancake batter up to 24h in advance. Just pop it in the fridge until needed!
- Dukkah is a mix of ground seeds, nuts and spices and varies recipe to recipe. I used a mix my mum had made with a base of almonds. You can buy dukkah premixed but if you want to try making it yourself, this is a good example of a basic one!

    I’ve cooked with coconut flour a few times while eating low carb, and it’s pretty nice. This recipe as a whole looks absolutely mouthwatering. I think I will just have to try it out!

    I bought coconut flour specially to make this. No. Freaking. Regrets. It was so good! I picked up some dukkah at Borough Market the other week and I think I’m about to become as obsessed with it as your mum is.

    On a side note, are you going to be developing more quick recipes like this? By the time I get home from the gym after work it’s gone 8, and if I’ve not done any food prep for the past couple of days it takes so long to make dinner/tomorrow’s breakfast/tomorrow’s lunch etc. that I’m about ready to kill anyone who gets in my way by the time I can finally eat. I’d really like to build up a small repertoire of quick and easy, but tasty and nutritious, recipes like this that I can rely on in the evenings.

      So glad you liked the recipe!! Coconut flour is a weird one to use but it’s super filling so I love using it. I’m trying to come up with more recipes with it 🙂

      I can definitely try to fit more quick recipes in! I’ve just started uni so I’m cooking for myself more than ever now and these are the kinds of recipes I lean towards anyway.

    Your pancake sounds exactly like something I ate way too many of in Sri Lanka: hoppers! They’re usually topped with an egg and some spicy/sweet coconut sambal. My mouth is watering just thinking about them now!
