Follow the exact same instructions as with the Thin Mints, but with the following changes:
– use white chocolate for the coating (you could use semisweet though it would probably be great too)
– you’ll also need about 3 tbsp of fine coffee grounds (i.e. espresso ground) NOT instant coffee. Mix 1 tbsp of them and use the rest to sprinkle a onto the chocolate-dipped oreo before the chocolate sets.
– I also sprinkled some chocolate flaky sprinkle things, and crushed candy canes on some of the cookies – that was more for decoration rather than flavour, but if you’re feelin it, go for it!
I would eat ALLL the peppermint mocha cookies.
haha, maaaan I ALMOST did, but I think some weird inner sense (I think it’s called ‘self control’..I dunno, I don’t use it much) managed to stop me…so I just ate more oreos instead ๐

I’m obsessed with peppermint mochas too, but I find they taste best during the holiday season. But white chocolate peppermint mocha cookies… now those sound good any day of the year. And, the touch of coffee on top – perfection.

Oh my, these all looks so good and delicious!! Chocolate + coffee = perfection. Adding coffee extract to chocolate makes everything much more better, or so I heard.
