Ingredients

  • 200 g frozen strawberries
  • 100 to 150 ml (4 to 6 shots) white rum depending on how strong you want the drinks
  • 50 ml (2 shots) lime juice
  • 1 to 2 tbsp caster sugar or agave syrup/maple syrup/simple syrup start with 1 tbsp, you can always add more to taste

Instructions

For the blender method:

  • Combine everything in a high speed blender and blitz until smooth. Taste and add more sugar/syrup if necessary, then blend again to combine. Pour into glasses and serve immediately.
200 g frozen strawberries, 100 to 150 ml (4 to 6 shots) white rum, 50 ml (2 shots) lime juice, 1 to 2 tbsp caster sugar or agave syrup/maple syrup/simple syrup

For the ice cream machine method:

  • You can use fresh strawberries here instead of frozen. Blitz everything together in a food processor, blender or with a stick blender in a jug (don't use a stick blender if you're using frozen strawberries - allow them to defrost first) until smooth. Taste and add more syrup if necessary, then blend again to combine.
200 g frozen strawberries, 100 to 150 ml (4 to 6 shots) white rum, 50 ml (2 shots) lime juice, 1 to 2 tbsp caster sugar or agave syrup/maple syrup/simple syrup
  • Pour into an ice cream machine and churn for 30-45 minutes until thick and slushy. Pour into glasses and serve.

Notes

Simple syrup: you can make simple syrup by combining equal weights of sugar and water in a small pot and bringing to the boil on the stove, stirring until the sugar dissolves. Remove from the heat and allow to cool before using. Store leftovers in a clean bottle in the fridge.
