Thanks to Vitamix for sponsoring this post! Hello lovelies! After that brief hiatus I am well and truly back. Like properly, this time, as I’ve just actually finished all my coursework and finals for university. I haven’t *officially* graduated yet but I will officially have my Food Science and Nutrition BSc degree in about a month and a half.…

Raw Sweet Potato Satay Salad {GF, Vegan}

I’ve had time to procrastibake, of course, but I see it as a sort of morning-meditation. The light is good, I’m feeling hungry enough to spark creativity but not so hungry that I’d eat a bowl of plain porridge.…

Carrot Streusel Muffins

October 9, 2011

Now that it’s getting colder here, it’s always a good idea to have muffins around, especially big, streusely, dome topped muffins. It’s also a great time for baking; Being able to stand by a warm oven and stuff warm food into your face, perfecto! These are definitely autumnal muffins, with earthy flavors and colors from oat bran, cinnamon and carrots. The raisins and streusel bring texture and sweetness to the muffins, creating a perfect balance of soft, moist and crunchy. Of course, just like any carrot…
