Oatmeal Chocolate Chip Cookie Pancakes for One {vegan + gluten free}

I made my Pancakes for One, but subbed extra banana for the egg whites. I also didn’t have any oat flour already ground, so I just used whole oats and blended everything up like an oaty blizzard. Then I added some dates for sweetness, and chocolate chips. Thus they ended up being gluten free and vegan, and solved this cookie/pancake/no-egg dilemma ALL AT THE SAME TIME.

Notes:

– The recipe was inspired by Dana’s Chocolate Chip Oatmeal Cookie Pancakes and adapted from a mixture of that recipe plus my Pancakes for One recipe.

– If you’re allergic to gluten, make sure your oats and baking powder are certified gluten free.

Ingredients

  • 1/2 cup (40 g) old fashioned oats
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • 1 ripe banana , , peeled
  • 1/4 cup (60 ml) milk (any kind – e.g. almond, cashew, oat, cow’s – obvs don’t use cow’s milk if you’re vegan)
  • 2 dates , , pitted
  • 2-3 tbsp dark chocolate chips , , plus more for topping (vegan, if required)
  • coconut oil , , for frying (you can use regular vegetable oil too)

Instructions

  • Blend all the ingredients, except the chocolate chips, in a food processor or blender, until well mixed. Stir in the chocolate chips.
  • Heat a non-stick frying pan with a little coconut oil. Dollop the batter into the frying pan (I go for a heaped tablespoon of batter) and spread out a bit with a spoon. Cook until lightly golden underneath, then flip and cook until the other side is golden. Serve warm with the remaining chocolate chips.

  3. Do you really need to post 5 nearly-identical pictures for this recipe? It makes the post very boring and tedious to read through.

    • AHAHA yeah I do cos it’s my blog and I can do what I want on here! I’m not writing it for you so if you don’t want the pictures, don’t read it – simple as! Plus the photos break up the text a bit so it has more structure 🙂 when you take photos of food all the time then every photo looks different from one another – I normally take 100 photos if a recipe and cut it down from there. Notice how there’s a different angle of the camera on each photo? It shows that drip of chocolate, and the swirl in a different light each time. I think food is beautiful and I want to showcase it.

If someone had told me ten minutes ago that it was possible for a person to think “you know what offends my eyes — multiple awesome (and clearly different) photos of freakin’ delicious-looking pancakes covered in glorious chocolate,” I would have said it couldn’t be so. What a crazy world we live in.

  4. Ah, this recipe is great because one of my roommates is allergic to eggs. I’ve been baking for me and my roommies this summer but baking without eggs can be a challenge (especially cakes). I wish I could make these for her but I’m leaving my apartment in two days to actually go study in London! I’ll definitely have to pass on this recipe to my roommie before I leave though 🙂 Thank you for the recipe.

    Anyway, Izy, you somehow always manage to take the most beautiful, glistening photos of food I have ever seen. Like, that chocolate topping just looks… amazing. And you have this signature way of stacking pancakes that is so CUTE. I love it!

    • Victoria, they do have a banana flavor to them. Simply substitute 1/2 cup of applesauce, instead. I don’t always have a ripe banana on hand, so I do this often in recipes calling for a banana. As a matter of fact, I had these pancakes for breakfast this morning using applesauce rather than a banana. The texture is a bit different, but it works. Personally, I think this recipe is better with the banana, but if you don’t like banana, then you wouldn’t think so. 🙂

  22. I just made these, and the first batch was too runny, more like oatmeal in a pan….so I added 2 tbsp Bob Mill’s Gluten Free Flour and it fixed it right up!:) Maybe because I used a frozen banana instead of fresh?

    • you can just leave them out altogether (the sweetness of the banana can make up for it) or I’d say add stevia or honey to taste 🙂

  28. Hi Izy! I made these today and was a little disappointed with the consistency. The batter was so runny that the pancakes fell apart while I was flipping them. I added a bit of almond flour and that helped bind them together, but they still werent as thick as those in your photos. Thoughts as to what may have gone wrong?

  31. i just found this recipe and am so excited not only to have it, but because of the china pattern that you photographed the pancakes on! My grandmother bought two patterns with violets on them while in Europe in the 1950’s, I believe and I now own both sets. I was wondering if yours is either Spring Violets made by Royal Chelsea in England or a pattern by Johann Haviland from Bavaria in Germany? I also have a teapot by Royal Grafton as well. I have never seen anyone here in America with these China patterns and was so excited to see yours!
